ARNOLFO - COLLE VAL D'ELSA (SI)

The story of Arnolfo is a story of excellence that goes back a long way and tells of the bond that unites the Val D'Elsa territory with the cuisine and passion for architecture of chef Gaetano Trovato and his brother Giovanni Trovato, Arnolfo's sommelier and maître de maison.

We had the burden and the honour of designing the extraction system of the new Arnolfo, two Michelin stars, from scratch, proposing our Maestro series ventilated ceiling to create a functional and comfortable kitchen, perfectly in line with the words of Chef Trovato:

‘The work in the kitchen is already very heavy, my main goal is to be able to create a good environment for myself, my family and all the guys who will want to share my passion for food in the future. My love for architecture, which has always influenced the way I cook, has been given the chance to express itself 100%’.

A project followed with meticulous precision, listening to the customer's needs and requirements in order to create an extraction system that reflected his vision of catering. The solution of the suction system with our Maestro-T suction ceiling was proposed to the client precisely because it is able to guarantee the entire kitchen environment, even when in view, great flexibility in the diversified distribution of air flow rates, with the end result of being able to exhaust according to the actual needs of the individual cooking appliances located in the various areas of the kitchen.
